Running a food truck is a lot harder than you would think. I’ve been doing this for two years now and it’s definitely has had it good days and bad. Now don’t get me wrong, business is doing great and I’m happier than I’ve ever been. I’ve got regulars who’ve told me they’ve scheduled their business meetings around my cooking! Flattering right? What my main problem is that I don’t have anywhere for them to really enjoy their food.
Sure it’s a food truck and the beauty of it is that I don’t have to commit to standing in one spot but I want to take care of my regulars and any new customers as well. I’m going to try out some picnic tables and maybe some canopies to give them somewhere to get out of the sun. My problem is that I’m limited to the space I’ve got so stuffing a couple of huge tables and tents in there as well is going to take some figuring out.
